2 leg joints – whole or in halves. Bone in or boned & rolled
2 shoulder joints – whole or in halves. Bone in, boned & rolled or flat
2 best ends – racks or cutlets
2 loins – whole saddle or 2 boned & rolled loins or Barnsley chops or single noisettes
4 chump chops or whole chumps
Neck fillets, mince, liver & kidneys.

Half new-season Southdown Lamb: £75.00
1 leg joint – whole or in half. Bone in or boned & rolled
1 shoulder joint – whole or in half. Bone in, boned & rolled or flat
1 best end – rack or cutlets
1 loin – boned & rolled, loin chops or single noisettes
2 chump chops or whole chump
Neck fillet, mince, liver & kidney.

The Southdown Sheep Society notes that ‘The Southdown is the oldest of the terminal sire breeds in the UK and as the name suggests originates from the native sheep which have roamed the South Downs in the South of England for many hundreds of years’.
